1 Halve courgettes lengthwise and scoop out the seeds and flesh 2 Place courgette skins into boiling salted water for 12 mins until skins go limp 3 Place breadcrumbs cheese ( 28g) tomatoes parsley mushrooms egg bacon and seasoning into a bowl and mix well together 4 Roughly chop the courgette flesh and add to the mixture 5 Place courgette skins in a shallow dish and brush with melted butter. Fill with mixture and sprinkle with grated cheese 6 Cover dish with foil and cook in preheated oven for 3035 mins or until courgettes are tender 7 Take foil off dish and replace in oven to brown for a further 8 10mins 8 Serve as a starter or main course servings: 48 small oven: 190 degrees C approx 35-45 minutes PREHEATED bottom shelf fan oven: 180 degrees C approx 35-45 minutes PREHEATED Email this Recipe:
