Instructions: 1. In a bowl, stir together cream cheese and the 2 tablespoons spreadable fruit. Using a serrated knife, cut a pocket in each of the bread slices by making a cut in the center of each slice from the top almost to the bottom. Fill each pocket with some of the cream cheese mixture.
2. In a shallow bowl, beat together egg whites, whole egg, milk, vanilla, and apple pie spice. Spray a nonstick griddle with nonstick coating. Preheat over medium heat. 3. Dip bread slices into egg white mixture, coating both sides. Cook bread slices about 3 minutes or until golden brown, turning once. 4. Meanwhile, in a small saucepan, heat the 1/2 cup spreadable fruit until melted, stirring frequently. Serve over warm French toast. If desired, garnish with fresh apricots or strawberries. NOTE: For a change of taste, top fruit-and-cream cheese-filled French toast with a drizzle of maple syrup or a dusting of powdered sugar instead of the spreadable fruit.
