Instructions: Peel peaches and cut in half, removing pits. Keep halves paired. Rub peach halves with lemon juice and sprinkle with sugar. Stir raisins and ricotta together. Heap mixture into half of each peach and cover with second half to re-form peach. Stand peaches upright, letting the halves separate slightly at the top to show a mound of filling.
