Instructions: Another great stuffed vegetable besides cabbage is the Greek style stuffed grape leaves. These can be bought in most supermarkets in a jar. They are usually paced in a brine & should be washed thoroughly before using because of the salt.
You generally treat it the same way as cabbage ie you need to slightly soften the leaves by either blanching or nuking for a bit then filling & baking covered in chicken stock till completed. The leaf is shaped somewhat like a maple leaf & should be filled by placing on the center & folding each point over & then rolling. You can use any favorite mixture, generally the Greek way is to use rice & a bit of ground lamb,with sometimes a bit of chopped spinach also & flavored with dill & feta. Usually it is served with a egg/lemon sauce (which can be made the low fat way.) Email this Recipe:
