Instructions: Put all ingredients in a crockpot and cook all night. Or, alternately, place all ingredients in a large stockpot and simmer, uncovered, for 1 1/2 hours.
Tester Laura Reileys comments: "Very simple and very hearty, this makes a great one-pot meal with a loaf of bread. I would add two more peppers to the mix (and maybe a bay leaf or a teaspoon of oregano for pizazz), and I might add the peppers a little later in the cooking process so they still have a little snap to them when the soup is ready to eat. "The combination of rice, tomato, ground beef and green peppers is classic - all brought together with a new twist in this soup.
