Instructions: Wipe mushrooms. Remove stalks and chop finely, reserve. Sprinkle lemon juice over mushroom caps and season.
In a heavy based pan fry bacon for 1 minute, add spring onions and garlic and continue to cook 1 minute or until spring onions are tender. Add diced mushroom stalks and cook a furthur 2 minutes. Combine breadcrumbs with parsley. Stuff mushroom caps with bacon mixture and cover wit breadcrumbs and parsley. Dot liberally with butter and place under preheated grill or in a very hot oven for 6-8 minutes or until mushrooms are tender and crumbs are golden brown. Serves 4. Email this Recipe:
