Ingredients:

1 x garlic clove crushed
2 x scallions finely chopped
1 tbl finely-chopped parsley
1 tsp Worcestershire sauce
1 tsp mustard powder
1/4 cup softened butter
Salt to taste
Freshly-ground black pepper to taste
8 x mushrooms - (2" dia ea)
1 x lemon juiced
16 x snails
Instructions:
Instructions: Preheat broiler. Combine garlic, scallions, parsley, Worcestershire sauce, mustard powder, and softened butter. Mix to a paste. Season with salt and pepper.

Remove stems from mushrooms. Sprinkle lemon juice over the "veins" of the mushrooms. Add 2 snails to each mushroom and top with seasoned butter. Broil for 5 minutes. Serve on a bed of watercress.

This recipe yields 4 servings.

Comments: A somewhat altered Swiss specialty.
