8 oz Rice
1 bag Prawns
1 x Handful Mushrooms
3 x Green Peppers
3 x Red Peppers
1 x Onion Finely Chopped
4 x Garlic Cloves Minced
2 tsp Tomato Paste
2 tbl Butter
6 oz Cheddar Cheese Grated
1 cup White Wine
1 tsp Worcestershire Sauce
1 tbl Lemon Juice
Instructions:
Instructions: 1. Remove top of peppers, deseed and boil 3-5 minutes, remove and chop lids

2. Boil rice till done

3. saute onion in butter, add garlic, mushrooms if using and then prawns, cook gently.

4. add tomato puree, worcestershire sauce, lemon juice and seasoning.

5. Stir into rice - treat a bit like a risotto

6. Spoon into and over peppers in an oven dish, add 2 tbs water, cover with foil and cook for 10-15 minutes.

7. Remove foil, sprinkle over cheese and bake for further 10-15 minutes

NOTES : add pine nuts or sunflower seeds cut lengthways and serve 2 different colours Add finely diced celery
Add chopped parsley
