1 x Pheasant cleaned
White wine for basting
----------------- STUFFING ----------------
1/2 cup Pecan meats chopped
1/4 cup Bread crumbs
1 tbl Melted butter
1/2 x Onion diced
1/4 cup Heavy sweet cream
1/2 tsp Salt
1/2 tsp Freshly-ground black pepper
Instructions:
Instructions: Mix all the above ingredients very well. Stuff pheasant, sew and truss. Roast, basting very often with white wine.
