4 lrg white baking potatoes
1/4 cup crumbled feta cheese
1/4 cup nonfat or low-fat milk
1/4 cup dry, (French) vermouth
1 tbl finely chopped fresh parsley
1/2 tsp salt
2 tbl Pickled Chile, (see page 120)
Instructions:
Instructions: Preheat oven to 400 degrees.

Scrub the potatoes and bake for 45 minutes or until done. Remove the potatoes from the oven and cut each one lengthwise. Scoop out the pulp and mash with the rest of the ingredients, except the chile powder. Spoon the mixture back into the shells, sprinkle with the ground red chile, and bake at 400 degrees for 20 to 30 minutes or until potatoes are warmed through.

SERVING SUGGESTIONS: Splendid served with a grilled steak. This variation of stuffed potatoes is well suited to al fresco dining.
