Instructions: Prepare potatoes:
Wash and dry potatoes and prick all over with a fork. Place in moderate oven and bake about 1 hour until tender. You can also cook in the microwave. Remove from oven, cut in half and scoop out flesh leaving a 1cm thick shell. Mash scooped out flesh and set aside. Prepare the filling: Dice onions. Melt butter in a pan and cook onions, garlic, bacon and mushrooms for 3 minutes or until mushrooms are soft. Remove pan from heat and stir in sour cream and mashed potato. Season well. Spoon filling into potatoes and top with grated cheese. Sprinkle with paprika and bake in a moderate oven for 15 minutes or until golden brown. Email this Recipe:
