1 lb Italian-style bulk sausage
1 sm onion chopped
2 cup diced fresh tomatoes - (abt 2 large)
2 cup cooked orzo pasta
2/3 cup prepared pesto sauce
3 x red bell peppers halved lengthwise,
Instructions:
Instructions: Preheat oven to 350 degress.

In a large skillet, cook sausage over medium-high heat 7 to 8 minutes, or until no longer pink, stirring frequently. Add onion and cook 3 more minutes, or until softened, stirring frequently. Drain off any fat.

Add tomatoes, cooked orzo, and pesto sauce; bring to a boil. Reduce heat and simmer 2 minutes, or until heated through.

Arrange bell pepper halves in an 8- by 12-inch baking dish. Spoon the sausage mixture evenly into the pepper halves. Bake, uncovered, 25 to 30 minutes, or until peppers are tender.

This recipe yields 4 servings.
