Instructions: Preheat oven to 350 degrees.
In a small saucepan, simmer green pepper in a small amount of water 2 to 3 minutes. Drain and reserve. Slice each tomato in half crosswise. Scoop out pulp; drain tomato halves upside down. Chop pulp; place in large bowl. Add green pepper and remaining ingredients except parsley. Place tomato halves cut side up in 13 1/2- by 8 3/4-inch baking dish. Fill each half with about 1/3 cup stuffing mixture. Sprinkle parsley over top. Bake 30 minutes. Serving size is 1 tomato half. Email this Recipe:
