1 cup Raisins
1 cup Diced dried fruit
2 cup Water
2 cup All-purpose flour
1 tsp Baking soda
1/2 tsp Salt
1/2 tsp Ground nutmeg
1/2 tsp Ground cinnamon
2 x Eggs, beaten
1 cup Unsweetened applesauce
2 tbl Liquid sweetner
3/4 cup Vegetable oil
1 tsp Vanilla extract
Instructions:
Instructions: Combine raisins, fruit and water in a saucepan; cook, uncovered, until water is evaporated and fruit is soft; set aside to cool; meanwhile, in a large mixing bowl combine flour, baking soda, salt, nutmeg and cinnamon; in another bowl, combine eggs, applesauce, sweetener, oil and vanilla; add nuts and reserved fruit mixture; stir into dry ingredients, stirring to mix thoroughly; pour into a greased 10-inch fluted tube pan and bake at 350 F for35 - 40 minutes, or until cake tests done.
