1/3 cup olive oil
3 med onions, minced
3 x carrots, minced
3 x celery stalks, minced
4 lrg garlic cloves, minced
1 cup minced fresh parsley
1 x (28-ounce) can Italian plum tomatoes, including juice
2 x (28-ounce) cans crushed tomatoes
1 x (28-ounce) can tomato sauce
1/4 cup dry red wine
2 tsp dried oregano or 2 tablespoons fresh
2 tsp dried marjoram or 2 tablespoons fresh
4 tsp dried basil or 1/4 cup chopped fresh
Instructions:
Instructions: In a large kettle, heat the oil over medium heat. Add the onions, carrots, celery, garlic and parsley. Cook, stirring occasionally, for 15 minutes.

Break up the Italian plum tomatoes and add along with the crushed tomatoes and tomato sauce. Then add the wine, dried herbs and pepper. (If you are using fresh herbs, add during the last half hour of cooking.)

Reduce the heat to low and cook, uncovered, for about 1 hour. Stir occasionally to prevent scorching. Serve over hot pasta or use in a baked pasta dish.
