Instructions: Grease and line an 200mm deep cake tin.
aga heat the empty outer container of the cake baker in the roasting oven. Cut the cherries in half wash and dry them. Mix with the sultanas and 2 tbsp of the flour. Soften the butter with the lemon rind and cream with the caster sugar until light and fluffy. Whisk the eggs and gradually beat into the butter mixture adding a little flour with each addition of egg. Stir in the remaining flour and the prepared fruit. Put mixture in the cake tin and level the surface. aga place the tin in the preheated cake baker and bake for approximately 1 1/2 hours until risen golden and a skewer inserted in the middle comes out clean. Cool. aga bake the cake with the ovenshelf on the floor of the baking ovenfor 2 hours. If after one hour it is sufficiently brown cover with foil. Test as before. Cool. This is quite a rich fruit cake and the moist fruit gives it bags of flavour. Email this Recipe:
