Instructions: This is the sour red berries of a wild bush (Phus coriaria) which grows all over the middle East. They are dried to a deep burgundy colour for use either whole or ground. Sumak has a pleasantly mild but definite fruity sour taste and is sprinkled over fish kebabs or salads such as Fattoush (qv) to add another layer of flavour. Quite often chopped raw onions to accompany kebabs are first rolled in it.
