4 tbl sesame oil
3 tbl rice-wine vinegar
1/2 tsp salt
1/2 pkt sugar substitute
4 cup bok choy (Chinese cabbage) thinly sliced
1 lb cooked chicken breast shredded
4 x green onions thinly sliced
1 x carrot grated
1/4 cup chopped fresh cilantro
Instructions:
Instructions: In a large bowl, mix sesame oil, vinegar, salt and sugar substitute. Add bok choy, chicken, green onions and carrot. Toss gently to combine ingredients.

Divide on four plates. Top each with a sprinkling of cilantro and peanuts.

This recipe yields 4 servings.

Comments: Sesame oil and a splash of rice-wine vinegar plus lots of veggies make this mayo-less chicken salad a great warm-weather alternative to more traditional versions. All the ingredients in this salad can be found in most supermarkets.
