Instructions: In a large bowl, mix sesame oil, vinegar, salt and sugar substitute. Add bok choy, chicken, green onions and carrot. Toss gently to combine ingredients.
Divide on four plates. Top each with a sprinkling of cilantro and peanuts. This recipe yields 4 servings. Comments: Sesame oil and a splash of rice-wine vinegar plus lots of veggies make this mayo-less chicken salad a great warm-weather alternative to more traditional versions.
