Ingredients:

1/2 cup Water
2/3 cup Plum jam
2 sprg fresh mint
1 x Cinnamon stick
1/2 tbl Sugar
1 x Quartered lemon
1 lb Peaches, peeled & quartered
1 lb Nectarines, peeled &
Quartered
1 lb Apricots, peeled &
Quartered
1 lb Red plums, peeled &
Quartered
1 pt Berries
Instructions:
Instructions: Combine water, jam, mint, cinnamon, sugar & lemon in large saucepan.

Bring to boil. Reduce heat & simmer 15 minutes. Discard mint & cinnamon stick. Add peaches (firmest ones first), nectarines, apricots & plums, simmering 5 minutes between each addition. Continue until fruit is lightly cooked, soft but still firm. Add berries.

Remove compote from heat. Cool & chill. Garnish with mint before serving.
