Ingredients:

3/4 x cupfresh basil leaves
2 lb firm ripe tomatoes, peeled, seeded and chopped
2 x cloves garlic, minced
3 x green onions, thinly sliced
2 tbl fresh chopped parsley
5 tbl extra-virgin olive oil
3 tbl red wine vinegar
1/2 lb brie cheese, rind removed, cut into small pieces
salt and pepper to taste
1 lb pasta
Instructions:
Instructions: Chop 1/2 cup of basil leaves and set the rest aside until later. In a large bowl, combine the tomatoes, garlic, green onions, parsley, chopped basil, olive oil and vinegar. Add the brie. Let mixture sit at room temperature for at least 4 hours but not more than 6 hours, then season to taste with salt and pepper.

In a large saucepan of boiling salted water, cook the pasta al dente. While the pasta is cooking, chop the reserved basil.

Drain pasta and transfer to a large bowl. Pour the sauce over the hot pasta and garnish with reserved basil. Serve with grated Parmesan cheese.
