Ingredients:

1 lb Chicken breast halves
Without skin -- cut in 1"

2 tbl Olive oil
1 cup Onions -- chopped
1 cup Celery -- chopped
1 tsp White pepper
1 tsp Dried thyme
2 x Bay leaves
1/2 tsp Salt
1 tsp Black pepper
1 tsp Sage -- rubbed
2 tsp Cayenne pepper
3 x Cloves garlic -- minced
1/2 lb Ham -- chopped
1 lb Smoked sausage -- chopped
1/2 cup Chicken stock
1 cup Tomatoes -- chopped
1/2 cup Tomato sauce
Instructions:
Instructions: Brown chicken in oil, add vegetables, garlic and spices. Simmer for 3 minutes, add chicken stock, ham, sausage, tomatoes and tomato sauce. Cover and bring to a boil stirring occasionally. Cook for 3 more minuntes, remove from heat and add converted rice. Cover and let stand until liquid is absorbed and rice is tender.
