Instructions: In blender or food processor, combine zucchini, sugar and lemon juice; blend until very smooth. Transfer mixture to container; cover and refrigerate until needed.
To serve, place about 2 tbsp. of the mixture in tall glass. Add ice cubes and enough ginger ale to fill glass; stir gently. Garnish with lemon slices and serve with a straw. Makes about 10 servings. Email this Recipe:
