Instructions: These are pure italian peasant food from Calabria the southern most tip Italys boot. They are sold dry but 1 prefer to purchase mine bottled in oil (pure olive oil if possible) as they are then easier to use and to combine with other ingredients. The tomatoes are usually .shredded for use and a little of their oil always adds extra flavour to dishes. Once found only in exclusive delicatessens sundried tomatoes quickly became a very popular ingredient and suddenly they were available everywhere. Once they were mass sproduced I felt that the quality must inevitably suffered both in terms of flavour shape and size of pieces. I now make a point of seeking out sundried tomato halves that are rnore expensive but are softer and more pungent than some o the cheaper varieties. You will probably find them in the gourmet section of a large supermarket.
