Instructions: This is simply an eggless tapioca pudding, dressed up with dates, nuts, and whipped cream in the manner of an ice cream sundae. Ice cream sundaes were a moderately new creation at this time, having been devised and named around 1890; their invention is variously claimed for Philadelphia, Menosha Mix together the tapioca, brown sugar. and water. Cook in the top of a double boiler over hot water for 1/2 hour. Add the dates and cook another 1/2 hour. Add the nuts and cool. Top with whipped cream.
