FOR THE PLATTER ----------------
375 gm Smoked mackerel fillet, skinned and flaked (12oz)
2 x Pink grapefruit, peeled and segmented
Lollo biondo lettuce leaves
1 bn Watercress
4 x Salad onions, finely chopped
1 sm Red pepper, diced
----------------- FOR THE DRESSING ----------------
2 tbl Light olive oil
1 tbl White wine vinegar
1 tbl Freshly chopped parsley
Instructions:
Instructions: Arrange the smoked mackerel and grapefruit on a bed of lollo biondo and watercress.

Sprinkle over the salad onions and pepper.

Blend the dressing ingredients together and spoon over just before serving.

NOTES : A delicious light supper or suitable for parties.
