Instructions: In a small bowl, combine egg white and water; beat gently until blended but not frothy. Pour sugar into another small bowl. Dip 1 small cluster of grapes into egg-white mixture, then coat with sugar. Place on a large plate. Repeat until all grapes are coated. Complete now or make ahead.
Complete now: Slice nectarines; peel and slice kiwifruit. Arrange nectarine and kiwifruit slices on a glass platter or in individual sherbet glasses. Sprinkle with ginger. Garnish with clusters of frosted grapes. Serve immediately. Make ahead: Store frosted grapes at room temperature up to 24 hours. Slice fruit 2 to 3 hours before serving. Serve as directed above.
