CHOP pineapple flesh into cubes and liquidise to get the juice. Put juice aside and retain the pulp. Put pineapple pulp in a deep saucepan with 1 1/2 cups water, cloves and cinnamon stick. Bring to the boil then simmer for 20 minutes. Strain, discard the pulp and spices and cool the pineapple syrup. Add the cooled syrup to the pineapple juice and combine enough basic syrup. Chill well in the refrigerator. To serve, pour into individual serving glasses and top up with crushed ice and add garnishing of your choice. Basic Syrup How to prepare basic syrup: 1 cup sugar 1 cup water 2 pandan leaves - knotted Method: PLACE sugar, water and pandan leaves in a deep saucepan. Bring to the boil, lower heat and simmer until sugar is dissolved. Remove pandan leaves and strain the syrup. Leave to cool for use as a basic syrup.
