Instructions: Brush each mallard-sized duck with a mixture of 1/4 cup sherry, 1 tablespoon Worcestershire sauce, and 1 teaspoon salt. Let stand at room temperature for 4 hours. Roast on a rack at 350 degrees for 1 to 1 1/2 hours, basting every 15 minutes with melted sweet butter.
