Its got a different vegetable medley every time she serves it. Coat a shallow roasting pan with nonstick spray. In a nonstick skillet over medium heat, saute onions, pepper and garlic in oil until tender, about 4 minutes. Add zucchini and saute 2 minutes. Remove from heat. Whisk eggs, soy sauce, wine, paprika, oregano and black pepper until blended. Add turkey, crumbs and vegetable mixture. Mix thoroughly and pack firmly into a 5 x 11-inch loaf.
