Ingredients:

3 x rnedium beetroots with
fresh tops attached (young leaves only)
18 x quails eggs
2 tsp clear honey
1 tbl cider vinegar or lemon juice
4 tbl creme fraiche
sea salt and pepper
5 x cm fresh horseradish root peeled and finely grated
3 x matjes (swedish cured herrings) sliced
Instructions:
Instructions: Cut off the beetroot leaves and rinse.

Clean the unpeeled roots and simmer in salted water until tender.

Simmer the quails eggs (1 minute for soft yolk 2 minutes for hard).

Peel.

Dissolve the honey in vinegar beat in creme fraiche and season.

Mix in about 1/2 tbsp of grated horseradish.

Arrange the beet leaves beets sliced herrings and eggs on plates dress with the horseradish cream and scatter with more grated horseradish root dill and a little salt and pepper.

Serves 6
