Instructions: Beat eggs until very thick and lemon color. Stir in milk and flour, sugar & salt. Stir well so it is very smooth. Heat non-stick skillet, melt a little butter in the pan and put in small amount of batter - you want these to be VERY thin. Cook about 1 minute on one side & flip-cook other side about 1 minute. Dont overcook, they should be tender and ever so thin. Keep warm while frying the rest.
Serve with sweetened strawberries, peaches, raspberries, etc., a dollop of whipped cream & powdered sugar. Apples cooked in a bit of apple juice with cinnamon/sugar are great, too. Email this Recipe:
