Instructions: Combine lemon juice, sugar, cinnamon, cumin, and paprika in a medium bowl.
Add remaining ingredients to bowl and mix well. Serve salad at room temperature or chilled. NOTES : The original instructions for this recipe were to cook the carrots and garlic in water for 8 minutes, and then drain and discard the garlic.
