Instructions: Make Ultra Light Pastry Dough through the second rise. Mix egg white & milk in a small bowl; set aside. Place flour on a work surface, place dough on top, & sprinkle with enough flour to keep it from sticking to your rolling pin. Roll out until its 3/4 inch thick. Cut into squares 2 1/2 by 2 1/2 inches.Place squares into the cups of a 12 cup non stick non stick muffin tin. Gently press into bottom of each cup. Brush the tops with the egg wash. Let rise for 20 minutes. While dough is rising, in a small bowl mix the cheese, sugar & vanilla. After puffs have risen, use your fingers to firmly push down the center of each cup. Place 1 heaping teaspoon into each depression. Bake for 20 minutes. Remove immediately from muffin tin. Serve warm.
