1/2 cup Red Bermuda onion -- diced

1 cup Cucumber, peeled, seeded --

1/3 cup Red bell pepper -- diced

1/3 cup Bell pepper -- diced small
8 tbl Fresh lime juice
1 pch Salt -- to taste
1 tsp Tabasco sauce
1/2 tsp Cumin
1/2 tsp Sugar
2 x Fluid ounces white vinegar
2 x Fluid ounces olive oil --
100 x % Extra Virgin
3 x Green Anaheim chili peppers
sl Thin,few seeds
3 x Red Anaheim chili peppers --
sl Thin,few seeds
Instructions:
Instructions: Combine all the ingredients and allow them to set at room temperature for one hour before using.

CHEFS NOTE: Refrigerate overnight and the flavor builds.
