Instructions: Makes 4 servings. VEGAN
Heat oil in large saucepan over medium heat. Saute scallions, carrot and tomato 5 minutes, stirring frequently, or until vegetables are soft but not brown. Add currants, apricots and couscous; cook 1 minute, stirring frequently. Add broth, apple juice, curry powder and salt. Bring to a boil, cover saucepan and remove from heat. Let stand until liquid is absorbed. Fluff couscous with fork. Garnish with cilantro. Makes 4 servings. Email this Recipe:
