Instructions: Heat a 10 inch cast-iron or nonstick skillet over medium heat, place the fennel seeds in it and toast the seeds until they pop and begin to brown, about 3 minutes.
Place the fennel seeds, pork and garlic in a large bowl and stir until they are uniformly combined. Season with salt and pepper. Shape the mixture into 5 patties, each about 3 inches across and 1 inch thick. Heat the olive oil in the skillet over medium heat. Add the sausage patties and cook until they are browned on both sides and completely cooked through, 5 to 6 minutes on each side. Email this Recipe:
