2 x chopped green peppers
2 x chopped yellow peppers
2 x chopped orange peppers
2 x chopped red peppers
1 lrg red onion chopped
3 cup vinegar
1 cup water
1 cup sugar
5 x garlic cloves one per pint
1/2 tsp dill per pint
1/2 tsp mustard seeds per pint
Instructions:
Instructions: In a large pot, combine peppers, onion, vinegar, water and sugar. Simmer for 15 minutes.

To each jar, add 1 clove garlic and each of the seasonings. Pack pepper mixture into hot jars leaving 1/4-inch headspace. Adjust 2-piece caps. Process 10 minutes in boiling water canner.

This recipe yields 5 pints.
