1 tbl extra-virgin olive oil
1 sm yellow bell pepper cored, seeded,
and thinly sliced
1 sm red bell pepper cored, seeded,
and thinly sliced
1 sm green, orange or purple bell pepper cored, seeded,
and thinly sliced
1 lrg onion cut thin wedges
1 x garlic clove minced
Instructions:
Instructions: Heat the oil in a large nonstick skillet over medium-high heat until very hot. Add the peppers and onion; stir-fry 3 minutes.

Add the garlic; continue to stir-fry 2 to 3 minutes longer, or until the vegetables are crisp-tender. Sprinkle with salt.

This recipe yields 4 servings.

Serving size: 1/2 cup.

This recipe is a veritable rainbow of colors. All bell peppers, named for their bell shape, have a mild sweet flavor and crisp, very juicy flesh.
