Instructions: In medium saucepan, combine sugar, cornstarch and nutmeg. In food processor or blender, puree yams and ripe banana with evaporated milk, until smooth.
Pour into saucepan. Cook, stirring constantly, over medium-high heat until mixture comes to a boil. Gradually stir about 1/2 cup hot mixture into beaten egg. Return this to the pan and continue cooking and stirring, until mixture thickens. Remove from heat; stir in butter and vanilla. Cool slightly. Spoon into dessert dishes and chill.
