Ingredients:
Amount Ingredient
1 x onion chopped
1 x green pepper chopped
2 x Cloves garlic chopped
1 cup vegetarian bouillon
2 med sweet potatoes cut into 1/2" cubes
1 x 14 Ounce Can Mexican style stewed tomatoes
1 can red beans (small beans) drained and rinsed
1 tbl chili powder
1 pch cayenne or to taste
Instructions:
Instructions: Cook the onion, pepper and garlic in the bouillon to soften, about 5 minutes. Add the sweet potatoes, tomatoes, beans, chili powder and cayenne, bring to a boil and simmer 15-20 minutes, or until the sweet potatoes are tender. Mash some of the vegetables a little if you wish to thicken the stew. Stir in the cilantro and adjust the seasonings to your taste. Serve hot or at room temperature.
