1 tbl corn oil
1/4 lb sweet potato vine cut 3" lengths
1/4 lb fresh meaty mushrooms, caps only sliced
1 x garlic clove crushed
1/3 cup julienned carrot
1 tsp salt or to taste
Instructions:
Instructions: Heat the oil in a wok or skillet. Add the vine and mushrooms and stir-fry over moderate heat for 1 minute. Add all the other ingredients and stir-fry for 8 to 10 minutes.

Serve warm or at room temperature.

This recipe yields 4 servings.
