Ingredients:
Amount Ingredient
2 tbl oil
knob of butter
2 med onions, chopped
2 x cloves garlic,chopped
1 tsp finely chopped fresh ginger
1 x vegetable stock cube (crumbled)
675 gm (1 1/2 lb) cooked sweet potato (boil in
skins - (dont over cook them so they go too soft) & then peel and cut into pieces)
Generous handful of fresh parsley, chopped
(use flat leaf parsley if poss rather than the curly stuff)
1/2 tsp fresh thyme leaves
1 x deseeded and chopped hot pepper (scotch bonnet)
maybe a bit less if you dont like spicy
Juice of 1/2 a lime
540 gm / 19 oz tin Ackee (drained)
Instructions:
Instructions: Fry onion in butter + oil until softened (not brown). Add garlic and ginger and fry for another couple of minutes. Add all other ingredients (except Ackee) and then cook covered for a few minutes.

Add Ackee, mix carefully so as not to break the ackee up, cover and gently heat through for 4-5 minutes.

Serves 3 people as a side dish and doubles easily (though youll need a big pan)

(Ackee is the fruit of a tropical tree and can usually be found tinned in Afro-Caribbean grocers or large supermarkets)
