Instructions: Fry onion in butter + oil until softened (not brown). Add garlic and ginger and fry for another couple of minutes. Add all other ingredients (except Ackee) and then cook covered for a few minutes.
Add Ackee, mix carefully so as not to break the ackee up, cover and gently heat through for 4-5 minutes. Serves 3 people as a side dish and doubles easily (though youll need a big pan) (Ackee is the fruit of a tropical tree and can usually be found tinned in Afro-Caribbean grocers or large supermarkets) Email this Recipe:
