Instructions: Mix together all the bhaji ingredients and toss in the flour and ground peanuts then add about 90ml of water so that everything is coated in a thick batter.
When ready to serve heat the oil and deep fry handfuls of the mixture in small batches until golden. Eat immediately letting everyone get a dunk in the dipping sauce. The vegetable mix can be made up hours ahead just add the water before blast off. Makes 12 Email this Recipe:
