Ingredients:
Amount Ingredient
2 med sweet potatoes finely sliced then sliced into matchsticks
1 lrg red onion halved lengthways and sliced lengthways around the core into fine petal shapes
good handful fresh coriander leaves good handful mint leaves
3 x cm root ginger grated
1 clv garlic crushed
1 sm red chilli very finely chopped
1 tsp sugar
1 x salt to taste
50 gm flour
40 gm peanuts toasted in a dry pan and crushed to crumbs
vegetable oil for frying
Instructions:
Instructions: Mix together all the bhaji ingredients and toss in the flour and ground peanuts then add about 90ml of water so that everything is coated in a thick batter.

When ready to serve heat the oil and deep fry handfuls of the mixture in small batches until golden.

Eat immediately letting everyone get a dunk in the dipping sauce.

The vegetable mix can be made up hours ahead just add the water before blast off.
