Instructions: In large saucepan or Dutch oven, combine potato slices and enough cold water to cover. Bring to a boil. Cover loosely; cook over med heat for 9 - 13 min or until tender.
Meanwhile, heat oil in large nonstick skillet over med-high heat until hot. Add onion; cook 2 min. Ad apple slices, apple juice, brown sugar, salt and pepper; mix well. Cook 10 - 15 min or until mixture is reduced to a glaze, stirring occasionally. Drain potatoes. Add to skillet; stir gently. Remove from heat; let stand 1 min before serving.
