DRY tangerine peel - approximately 60sens worth (available mainly at Chinese medical stores/stalls) Boil water, beans, rice and lotus seeds on high. When water is boiling, turn flame to low. Continue to simmer the porridge till beans and seeds are soft. Add sugar to taste. Tips on cooking beans, lentils and legumes 1. Always wash your beans throughly. For some reason (and I dont know why) I always get more than I bargained for. For example, stones (that look remarkably like the beans), BUGS (dead and alive) and of course, enough sand to fill up a small flower pot. 2. If you do not wish to soak your beans overnight or boil them till your kitchen turns into a sauna, invest in a pressure cooker! I think it is the greatest invention after the Chinese wok.
