Rinsing the rice is crucial; otherwise, the pudding will be pasty. In large saucepan, scald milk. Add rice, sugar, cinnamon and cloves and bring to simmer over medium heat. Simmer, uncovered, until tender, stirring occasionally to prevent rice from sticking to bottom of pan, about 20 minutes. In small bowl, beat egg, egg white and coconut milk with 1/2 cup of hot rice mixture. Add this back to rice in pan and stir over medium heat until mixture is very thick, about 1 minute. Remove from heat. Stir in vanilla. Spoon pudding into serving bowls. Serve at room temperature or chilled with sprinkling of coconut. Hallie Harron. Email this Recipe:
