1 kg flour, plain
500 gm butter
4 x eggs
250 gm sugar (caster)
Instructions:
Instructions: Mix the flour rub in the butter until the mixture resembles breadcrumbs.

Whisk the eggs, sugar and vanilla together in another bowl add to the flour/butter mixture, and blend until the pastry is smooth and hold together in a ball.

Wrap in plastic and refrigerate it for at least 20 minutes.

Roll dough out into flan.

Cover the lined pan with foil an refrigerate it before filling, prick the bottom with a fork and bake it unfilled 10 minutes in a preheated 350 degree oven or until golden.

Do not overwork pastry dough.
