4 tbl olive oil
3 x onions, chopped
2 x red peppers, deseeded, skinned and chopped
1 x clove garlic, crushed
2 x green peppers, deseeded, skinned and chopped
450 gm tomatoes, skinned and chopped
1 tsp Greggs Ground Ginger
1/2 tsp Greggs Mixed Spice
1 tsp ground Greggs Allspice
170 gm sugar
150 ml white wine vinegar
Instructions:
Instructions: Saute the onions in the olive oil for about 30 secs.

Add the green peppers, garlic, red peppers and the spices. Stir well.

In a separate saucepan heat the vinegar and sugar together for about 40 secs until the sugar is dissolved.

Add the raisins to the vinegar and sugar, stir then combine the two mixtures in one saucepan. Simmer for about two hours, stirring occasionally.

Pour into a clean, dry jar.

Cover and refrigerate.
