Instructions: Heat the oil in a heavy pan and saute the onion, garlic, and bell peppers for 7 to 8 minutes. Stir in the tomatoes, pepper, chile, and wine. Cover and simmer over very low heat for 30 minutes or until the sauce is thick and clings to a spoon.
Yield: Approx. 4 cups SERVING SUGGESTIONS: This is perfect with scrambled eggs or on a ham and artichoke frittata. Its also lovely ladled over a grilled fish such as halibut. Email this Recipe:
