Instructions: Cut red peppers into strips and put in a shallow bowl.
Combine all the remaining ingredients except parsley and toss with peppers. Let marinate a few hours or overnight. Sprinkle with parsley. A ramble through any farmers market offers a panoply of peppers. Though they come in a mind boggling array of shapes colours and sizes they are basically either sweet or hot. Colour selection includes purple green chocolate brown and even white but for visual appeal strips of red ones are our choice here. A sprinkle of cayenne adds a touch of real fire. Email this Recipe:
